Pizza courses in Italy that last a week or longer are professional pizzaiolo programmes: one to several weeks of dough, stretching and oven practice, ending with a certificate. The field is led by the Neapolitan associations that teach the traditional method: hand-stretched dough, high hydration, and a wood-fired oven at around 450 °C.
