VSB Bologna (La Vecchia Scuola Bolognese)

La Vecchia Scuola Bolognese was founded in 1993 by Alessandra Spisni and now trades as VSB Bologna; lessons are taught by her daughter Stefania Spisni. It teaches hand-rolled sfoglia: a one-day class on tortellini, tortelloni and tagliatelle, a three-day amateur course, themed tortellini and lasagne classes, and a 12-week professional course for six students a year.
